Bourbon Blueberry Buckle

Don't mistake this buckle for a cobbler. Buckle is more cake-like or even fruit-filled coffee cake-like, as opposed to a traditional cobbler with a layer of baked fruit topped with a crumbly topping.


The streusel topping, sugary glaze, and richness from the bourbon add a sweet surprise when topped with ice cream or whipped cream.


Ingredients

3/4 cup sugar (I've been known to use Splenda to save calories)

1/4 cup butter, melted

2 eggs

1 tsp vanilla extract

2 Tbsp of your favorite bourbon

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cups buttermilk

2½ cups fresh blueberries


Directions

Preheat oven to 375 degrees.


Stir sugar and melted butter in a large bowl. Beat in eggs, vanilla, and bourbon.


Combine flour, baking powder, and salt. Add flour mixture and buttermilk, alternately, to batter. Gently fold in berries.


Spread batter into a lightly greased 9-inch square baking pan. Sprinkle with Streusel Topping. Bake at 375 degrees for 25-30 minutes, or until wooden pick inserted near center comes out clean.


When cool, drizzle with a glaze made with 1/2 cup powdered sugar, 1-2 tbsp of milk, and 1 tsp of bourbon.

Streusel Topping

With a pastry cutter, blend until crumbly: 1/4 cup of sugar, 1/4 cup packed brown sugar, 1/4 cup flour, 1/4 cup butter, and 1/2 tsp ground cinnamon.


Serve with ice cream or your favorite whipped topping.
