Makes enough glaze for 1 ham
Glaze
¼ cup pure maple syrup (no substitutions)
½ cup orange marmalade
¼ cup bourbon + 2 tablespoons bourbon
2 tablespoons unsalted butter
1 tablespoon Dijon mustard
½ teaspoon ground pepper
¼ teaspoon cinnamon
Combine all ingredients in a small saucepan EXCEPT 2 tablespoons bourbon. Cook over medium heat, stirring occasionally, until mixture is thick, syrupy, and reduced to one cup. Should take about 5-10 minutes. Set aside.
When ham has about 10 minutes of cooking time remaining, add final 2 tablespoons of bourbon. Brush ham with 1/3rd of glaze. Return to over for final 10 minutes. Remove ham from oven, brush entire ham with another 1/3rd of glaze. Cover ham loosely with foil and allow to rest for 10 minutes.
Warm remaining glaze with 1/3rd cup of ham juices. Carve and serve ham, passing the sauce/glaze around the table. Enjoy!
