Bourbon Peach Cobbler

Capture the summertime goodness of peaches with a hint of bourbon in this quick and easy to make cobbler that will win the hearts (and stomachs) of your friends and family with whom you share.



Ingredients


6-8 peaches, pealed and sliced

3 Tablespoons cornstarch

3/4 cup sugar

1/4 cup of your favorite bourbon


1 cup flour

2 egg yolks

1/4 cup melted butter (no substitutions)

1 teaspoon baking powder

1 cup sugar

2 egg whites stiffly beaten

Instructions


Preheat oven to 375 degrees.

Combine peaches, cornstarch, 3/4 cup of sugar, and bourbon in a large bowl. Pour into a greased 13x9x2 pan.

Mix egg yolks, melted butter, and remaining sugar in a large bowl. Add flour and baking powder and combine. Gently fold in beaten egg whites. Drop by tablespoons on top of peaches and gently spread to cover.

Bake at 375 degrees for 45 mins. Allow to cool. The topping will be light, yet deliciously crispy-crunchy. Serve with your favorite vanilla ice cream or whipped cream.
