Bourbon Pecan Salmon

We’re always trying to eat better and one of the best ways is to get more fish into our weeknight dinners. If eating fish isn’t your “cup of tea”, you’re in good company.  Mrs. Joseph Bourbon isn’t the biggest fan of fish, but she does enjoy this bourbon-inspired dish. Best of all, it’s an easy and quick healthy meal that packs a ton of flavor.

 


Serves 2


Marinade

2 Tbsp brown sugar

¼ cup soy sauce

¼ cup your favorite cooking bourbon (for me, that’s Heaven Hill Quality House)


Place two boneless, skinless salmon filets in a quart Ziploc bag. Stir together marinade and add to the bag. Seal and place in the refrigerator to marinate for at least two hours. I usually start my marinating process in the morning and flip the pouch mid-day.


Preheat the oven to 400 degrees.


Spray a foil-lined cookie sheet with vegetable spray. Remove filets from the bag, pat dry and lay on the cookie sheet. Season with Old Bay Seasoning and ground pepper.


Bake in a preheated oven for 15 minutes.


Remove from oven and sprinkle with the following:

2 Tbsp brown sugar

¼ cup crushed pecans (my favorite are these found at Rouse’s grocery stores)

Drizzle with a little pure maple syrup (my favorite comes from Casey Jones Distillery)


Return to the oven and bake for 3-5 more minutes. 


Serve and enjoy all the goodness!
