Kentucky Bourbon Derby Pie

Don't hold this recipe back for just the big races! Every day is the perfect day for this warm, gooey, bourbon-chocolate deliciousness.



Ingredients

1 homemade pie crust (or a refrigerated roll-out pie crust)

1 cup brown sugar

1/3 cup flour

3 large eggs

1 stick butter, melted (1/2 cup)

1/3 cup your favorite bourbon (I used Evan Williams Black Label)

2 teaspoons vanilla extract

1 teaspoon salt

12 ounces dark chocolate chips

1 cup chopped pecans


Preheat oven to 350 degrees F.


Roll the pie crust into a circle about 3 inches wider than your pie pan. Place the pie crust into the pan, crimping the edges. Refrigerate the pie crust and pan while combining the filling.


In a large bowl, mix the brown sugar, flour, eggs, butter, bourbon, vanilla and salt. Fold in the chocolate chips and chopped pecans.


Pour the filling into the crust. Place pie pan on a cookie sheet to catch any drips and place onto the lowest oven rack.


Bake until the top is golden and the center is firm - about 45 minutes. Cool completely and serve with whipped cream or ice cream.
