Maple Apple Bourbon Glaze

While many enjoy the first crisp mornings and leaves underfoot, the fall also means it’s time for Barbour jackets and apple cider. Pair any of that with your favorite bourbon and it’s going to be a great day. Package all that into a glaze for your favorite meat, fish or poultry and the aroma is divine.

Makes enough glaze for 4 portions

Glaze

¼ cup pure maple syrup (no substitutions) ¼ cup apple cider ¼ cup bourbon 2 tablespoons brown sugar 1 tablespoon Dijon mustard ¼ teaspoon ground pepper ¼ teaspoon cinnamon

Mix all ingredients in a shallow skillet. Bring to a gentle boil. Reduce heat and stir until thickened. Brush on your favorite chicken, pork or fish dish.
